Salad! First, cut up some gorgeous tomatoes and toss in a generous amount of olive oil, salt, and pepper. Roast them, and let them cool overnight (keep the oily tomato drippings with them). Prep the rest of the salad by adding together arugula, sliced radishes, sugar snap peas, Parmesan, and thyme. Mix everything together with a squeeze or two of lemon.
