Stuffed delicata squash:
Halve and seed a delicata squash. Brush with olive oil-season with salt and pepper. Put on a baking tray lined with foil and preheat the oven to 350 degrees.
Brown a pound of sweet Italian sausage and a chopped red onion in a cast iron skillet. When almost done, throw in a large diced tomato, chopped sage and thyme, some bread crumbs and about 2 cups of whatever cheese you have on hand. I used cheddar, Gouda, and Parmesan.
Stuff squash halves with mixture and bake about 30 minutes or until you can pierce squash with a fork.
I served this with sliced cucumbers (white wine vinegar marinated) and a dollop of sour cream. I garnished with fresh chives.
