Rakakat jibne (crunchy cheese rolls) a Lebanese starter
You need: filo pastry / 200g akawi cheese (or feta) / 100g mozzarella cheese / 3 green onions / 2 tbsp nigella seeds (or black cumin seeds) / salt & pepper / flour / water
To make: soak the akawi or feta cheese in water for 1 hour to reduce the salt content to your desired taste. Grate the cheeses in a bowl, then add in the onions, seeds and season with s&p. Spread the filo dough & cut into square sizes, place 1 tbsp of cheese mixture and roll. Seal the edges with a mixture of 1 tsp of flour & 3 tbsp water. Once ready, bake in the oven at 180C with a little olive oil until golden and crunchy. Serve hot & enjoy!
