Dandelion mustard | soak yellow mustard seeds in dandelion-flower infused vinegar and bay leaves overnight. puree with more dandelion flowers, a pinch of salt, turmeric, and chilli flakes, and a dash of beer.

This sounds lovely! How would you recommend infusing the dandelion vinegar?

I picked a jar of dandelion flowers, cleaned them and removed all green and stem, and then poured in white wine vinegar to cover. Close the lid and let infuse for as long as possible, shaking the jar every so often (I let it sit for a month)
