Apple and Blueberry pie..I know it looks like beets! It's my husband's "unbirthday" and we celebrated with pie and ice cream. Thinly sliced apples with blueberries, added a little sugar, lemon and lemon zest. Thawed pie crust I had in the freezer, filled the pie and brushed the top with apricot jam. Popped into a 425 Fahrenheit oven for 30 minutes, then turned down the oven to 325 Fahrenheit for about 20 minutes. Ended up putting a pie crust edge protector for the last 20 minutes so the crust was not too dark. Let it sit, added a scoop of vanilla ice cream (and a candle) and while it looked like a beet pie, it tasted of apples, blueberries and a bit of lemon!
