To make sherry-strawberry vinaigrette, smash about 4 strawberries in a mortar and pestle to a chunky purée (should yield about 2 tablespoons). Transfer to a jar, then add 2 tablespoons minced shallot, 3 tablespoons sherry vinegar, 1/2 teaspoon Dijon, and 6 tablespoons olive oil. Adjust acidity and seasoning to taste with lemon juice, piment d'espelette, and sea salt.
To assemble salad, toss the shaved asparagus with just enough vinaigrette to lightly coat. Let sit a few minutes (to slacken the asparagus) then toss in remaining ingredients with more vinaigrette to lightly and evenly dress.
