Harrissa tofu scramble:

Saute garlic and onion in a little olive oil. Add a generous tablespoon of harrissa. Add black beans, sliced mushrooms, shishito peppers and saute for a bit. Add crumbled tofu with some salt, pepper and turmeric for color. Cook till everything has settled just so.

Top with shredded cheddar and chopped cilantro.
