Empty a bottle of red wine in to a pan with a spoon of honey. Trim off the root of a red onion (keeping the skin on), cut the onion in half across the grain. So revealing the layers of the onion. Cook in wine till soft. Then take off skin and let wine reduce to a thin syrup. Using the syrup as supposed to caramel in a tarte tatin.
