Sauté some onions and garlic in a little olive oil. Once softened, toss in whatever blend of mushrooms you fancy (I used portobello, shitake and oyster) and brown. I added chili peppers and a couple sprigs of thyme (or any herb you fancy). Add a couple splashes of port or any other fortified wine you have on hand and cook down. Add some cream and broth and simmer until slightly thickened. Toss in pasta of your choice and taste for seasoning!
