Tofu, cauliflower rice and corn salad, over a bed of fresh, local kale and arugula:
Baked tofu tossed in 1 tbsp of olive oil | 40 min @ 375
Cauliflower rice (I bought it already riced from Trader Joe's) and corn mixed with 2 tbsp olive oil, red pepper flakes, black pepper, basil, and 1/2 lemon squeezed over it all.
Then I combined the tofu and cauliflower salad and left it sauce-free. Last night I served it hot and added some hot sauce; tonight, I put it over a bed of fresh greens and added some Dijon. Tomorrow I'll probably try it with a Tikka Masala sauce.
