Rubarb-Apple Galette

Simmer 2 stalks of rhubarb (diced) with sugar and a squeeze of lime in a small saucepan, until the fruit softens and looks jammy. Let cool.

Meanwhile, roll out your favorite pie dough to a very thin round and transfer to a parchment lined baking sheet. Spread rhubarb over crust, leaving a 2" border. Top with thinly sliced apples (peeled and cored). Fold crust edges up, pleating every few inches. Top apples with a few T of sugar and about 2T butter cut into cut into cubes.

If you want the crust to have a shine, brush with an egg yoke/cream mixture.

Bake at 400 until crust is browned and apple have some color - about 40 min. #notarecipe #rhubarb #apple #summer
