Portabella mushrooms come to the rescue again. This is one of my favorite (not)recipes because you pick the toppings!
Grilled portabella mushroom topped with sautéed shredded mustard Brussels sprouts, black beans with garlic and olive oil, sautéed ground bison, spiralized roasted butternut squash, and diced avocado. A little hot to top would have kicked it up a notch.
