Grilled chicken Pura Vida
I discovered green mangos in Costa Rica and decided to make Pura Vida Chickpea Salad. Recipe 1 cup blueberry, 1 avocado 2 cans chick peas or fresh. 2 limes squeezed salt pepper to taste. 1 papaya 2 green mangos peeled and sliced. 1 cup cilantro chopped. Olive oil. 1 tomato
In blender combined 3 slices of mango and papaya 1/2 cup cilantro, 1/4 cup oil 1 tablespoon sea salt blend. Marinade chicken for 20 minutes in lemon and olive oil with cilantro salt and pepper. Char grill sliced breasts for 10 to 15 minuets. Set some of the dressing aside to top the salad. Combine all ingredients in large bowel and toss with dressing. Add pinch of salt to the end and best served cold.
