Pasta with mushrooms, corn, and creme fraiche a la Phyllis Grant.
Caramelize shallots, adding a splash of balsamic after about 20 minutes. Add finely chopped garlic and anchovy. Add sliced mushrooms and brown. Toss in corn, then stir in a little creme fraiche and parsley. Mix with fresh pasta, adding more creme fraiche, parsley and salt. Top with Parmesan and inhale.
