Ground Turkey and Cabbage Skillet

To prep, cut up 1 yellow onion, 2 cups of coarsely chopped cabbage, and measure out 1/4 cup of vegetable broth and 1 cup of your favorite tomato sauce- I like to make my own.

In a pan or skillet heat a tablespoon of olive oil and place onions to cook until lightly brown. Place ground turkey in pan to cook until lightly browned. Season turkey with salt, pepper and a teaspoon of cumin. Once turkey is cooked evenly place cabbage, tomato sauce and vegetable broth and mix evenly for 1-2 mins. Don't over cook because you want the cabbage a little crunchy!

Slice up some fresh mozzarella and place on top- the heat from the skillet will melt the mozzarella. Chop up a little parsley and sprinkle on top of the skillet and serve!

This takes about 25-30mins to cook! A fast and delish weeknight dinner!
