Quick, strong iced coffee is easier than you think! It's all about ratios, so if you have a kitchen scale, you're in business. Measure out 335 grams of water and heat it. Grind (coarsely) 30 grams of beans. Load in 165 grams of ice into the bottom of your Chemex or other pour-over coffee maker. Pour the hot water over the coffee, which will brew directly onto the ice. A few minutes later, give it a swirl (it's ok if there are tiny lingering ice shards) and serve over ice. Makes 2 large servings!
