Roast about 4 sticks of chopped rhubarb with 1 - 2 tbsp of honey for about 15 - 20 mins at 180c
Roast tbsp of flaked almonds and pistachios for 5- 7 mins
Toast 3-4 slices of sourdough
Spread ricotta on the sourdough, spoon over rhubarb and sprinkle on nuts. Some basil leaves and orange zest really finish it off.
