Roast about 4 sticks of chopped rhubarb with 1 - 2 tbsp of honey for about 15 - 20 mins at 180c
Roast tbsp of flaked almonds and pistachios for 5- 7 mins
Toast 3-4 slices of sourdough
Spread ricotta on the sourdough, spoon over rhubarb and sprinkle on nuts. Some basil leaves and orange zest really finish it off.

Delighted....love rhubarb season, seemingly my mum craved it constantly when pregnant with me so I blame her for my obsession ?
