Onion and walnut risotto

Toast your walnuts before adding in some butter and minced onions. Add in your risotto and toss around until coated and translucent around the edges. Deglaze with a splash of white wine and then slowly add warm chicken stock. I finish this off with some crumbled Brie and roasted tomatoes. Simple and perfect.
