Demi Salad w/ Dijon, Shallot, and Cider Vinaigrette
Serves 4 to 6
Remove lettuce leaves, then wash and dry them. Tear gently into bite-size pieces. Divide among 4 to 6 individual salad plates. Set aside. In a small glass jar with a lid, combine the shallot, mustard, vinegar, olive oil and salt and pepper to taste and screw lid on tightly. Shake until thoroughly mixed. Drizzle lightly over perfectly washed and dried leaves of lettuce. Toss gently and finish with a final bit of salt and pepper.
