Garlic scape asparagus pesto: I love the idea of garlic scape pesto, but when I first tried it it was way too...pungent. I figured asparagus would go well with it to cut the garlic's strength. You can alter this to your taste--up to about 3/4 asparagus to 1/4 garlic scapes if you want something more mild. I blanch the asparagus and food process it with the scapes, Parmesan, salt, lemon juice and pine nuts. This is great with pasta, on flatbread or pizza, stirred into soups, etc. I know when my husband really likes something because he'll turn it into a project. After The first time I made this, I had to travel for work and when I came home he had made and canned about 6 pounds of the stuff. Success.
