Chamomile and fennel tapioca pudding: this was so. Good. I steeped fresh camomile and some crushed fennel seeds in some whole milk heated to the almost-boiling point. Let it cool down and strain. Then I added 1/3 cup of tapioca pearls and let sit 1/2 an hour. I scraped in seeds from a vanilla bean, and added an egg yolk, 1/4 cup sugar (I'd do honey next time), and a pinch of salt. Heat everything to a mild simmer and let it go about 15 minutes, stirring when I remember. Poured into molds and chilled. #dessert #notarecipe

I haven't had tapioca pudding in years, but yours looks delicious!

I was shocked at how good this was. But you could also make a killer ice cream from the same base (steeped chamomile and fennel seeds)
