Cut 6 marrow squashes in half. Scoop out center of each marrow squash; set aside. Sauté the scooped squash with 1 onion, a garlic clove and 1 lb of ground meat (your choice; I used beef). Season with salt & pepper, 1 tablespoon tomato paste, 1 tsp. Dried herbs (mixture of oregano, thyme & basil). On medium heat cook until meat is completely browned. Add 1 tablespoon flour. Continue to cook for about 5 minutes. Remove from heat. Add 1 beaten egg and 1/2 cup grated Parmesan cheese. Fill each squash 'boat' with the meat mixture. Top each marrow squash with Parmesan cheese. Place in an oven proof dish and bake covered with foil for about 1 hour at 350 deg. Remove foil and place under broiler until nicely browned.
