Using leftover brown rice in a delicious & healthy way - Greek salad with marinated chicken & rice
You need: chicken breast / paprika / garlic salt / yogurt / salt & pepper / brown rice / cherry tomatoes / cucumber / red pepper / yellow pepper / feta cheese / lemon / olive oil
To make: marinate the chicken in paprika, garlic salt, s&p, yogurt for at least 1 hour. Heat olive oil in a pan and cook the chicken until done. Slice it up for the salad. In a bowl, mix veggies with rice and mix in the dressing of lemon & olive oil. Top with feta & chicken and enjoy!
