Roast sweet potatoes and chickpeas in oven at 400 degrees in a mix of olive oil and spices. I went with some chili powder, cumin, and salt. Make some quinoa. Squeeze half a lemon and chop some fresh herbs to mix with quinoa (we only had a bushel of cilantro). Cube and avocado. Slice some tomatoes or just toss some in. Mix with quinoa. Add the roasted potatoes and chickpeas. Add some flax seeds for extra love. Throw on top of your favorite spring mix .
