STOP what you're doing and make these jewel-toned quick pickled red onions (...and try not to eat them all before they make it to dinner)
Bring some red wine vinegar to a boil. Add some sugar, salt, dried chili flakes, peppercorns and caraway seeds (feel free to experiment here). Stir in sliced red onion & turn off heat. Allow to sit for a few minutes. Add to salads, bowls, everything. The brine makes a great base for vinaigrette too!
