Colorado green chili smothered breakfast burritos.
Cook seasoned pork Boston butt in slow cooker with sliced onions. When cooked, take out to cool, then shred. In Dutch oven, sauté another onion until soft, add 5 cloves chopped garlic until fragrant. Add shredded pork, 7 cans of Hatch green chilis diced, 14oz. can diced tomatoes with juice, tsp. smoked paprika, tsp. your favorite chili powder, salt, pepper, 1 quart chicken stock. Simmer 2 hours. Add 1 Tbs. corn starch mixed with water to thicken up chili. Eat with tortillas. For breakfast burritos - scramble eggs, put in flour tortilla with cheese. Pour warmed chili over top. Top with cilantro and more cheese.
