An Asian-inflected carbonara, loosely based on Melissa Clark's Spicy Pan-Fried Noodles (link below). I started by browning some uncured pancetta and sliced garlic in a sauté pan, then tossing in some frozen edamame and baby spinach and cooking until thawed/wilted. Next went in the cooked noodles (dried "udon," in this case) and some soy sauce, peanut oil, rice wine vinegar, grated ginger, and salt. When everything was combined and hot, I tossed the mixture in a bowl with about 3/4 of a beaten egg until fully incorporated, and served, garnished with chopped peanuts and lime.
