I've been salivating in my head about a giant Thai-inspired Big Salad with chicken. So that's what I made. I devoured the whole freakin bowl. I was quite hangry.

Ingredients: roughly chopped salad greens (a small head of crisp lettuce, cored), half small purple cabbage cored and cut in 4 segments and thinly sliced, 5 scallions thinly sliced on bias (white and green parts), half an English cucumber peeled and julienned, 2 carrots peeled and shredded, handful of cilantro finely chopped (I use stems and leaves, I don't care), half cup of dry roasted and salted peanuts roughly chopped -- toss all together with juice of a lime, quick slug of evoo and salt to taste. Top with "sauced" chicken and grub down (1 lb of boneless skinless chicken (I had tenders) cut into bite size pieces, braised in 1 can of regular coconut milk and sriracha to taste, and some salt to taste. Cook on the stove until chicken is done and sauce is reduced by half, allow to cool as long as you can stand to wait). Top with a little more chopped cilantro and a few more peanuts if desired.
