Couldn't make it to the grocery store so tonight I played, "What's laying around the kitchen?". Ginger orange glazed Salmon over a bed of spinach, peas, and roasted sweet potatoes. Salmon glaze made by simmering the juice and zest of one orange with ginger and a splash of rice vinegar. Then strained and thickened using a half tsp. of tapioca starch and brushed over salmon during cooking.
