Barley risotto with mixed greens, garlic and Parmesan. Sauté mined shallot and garlic in olive oil, add a cup or so of pearled barley and toast it, then deglaze with about a half cup of white wine (or in this case - some of that rosé). Stir in simmering chicken broth one cup at a time until it's chewy and creamy - having some of that rosé to drink while this happens is helpful - then add chopped greens, Parmesan, and lemon zest. #vegetarian #notrecipe
