Leftover mashed potatoes....I Combined potatoes w/ an egg and sharp cheddar cheese. Form into patties, dip in egg and salted panko bread crumbs. Pan fry in about an inch of vegetable oil until golden brown. Can be made ahead and reheated in the oven at 350, maintaining the crunch factor.
I made this batch bite sized to serve w/ a fabulous dip I had in New Orleans. For the dip... Mix together 1 C. mayonnaise, 2 big squirts of anchovy paste, scant tsp. of Worcestershire sauce, 1 tablespoon lemon juice, & scant grated garlic to taste.
If you can't handle anchovy paste you can substitute w/ catsup, but the anchovy adds GREAT flavor (and it's not fishy tasting).
