Leftover veg tofu scramble:
Lightly fried broccoli stalks with sumac, cumin, turmeric, black pepper and Himalayan black salt. Crumbled in firm tofu and added a little water. Chopped a massive bunch of fresh coriander I hadn't gotten around to using. Cooked altogether until suitably wilted. Topped with fresh avo, chia seed and drizzle of olive oil. Made sure I had an attractive blue bowl handy...
