THAI MEATBALLS over sticky rice....1 lb. Ground pork (or turkey) combined w/3/4 C panko, 1 egg, 2 tbsp soy sauce,
1 tbsp ginger, tsp garlic powder, tbsp scallions, 2 tbsp cilantro & juice from half a lime.
-Brown balls in veg. oil until almost cooked through.
-Remove balls and make sauce.
RED CURRY SAUCE....In the same pan, add 1 can of coconut milk, 2 tbsp red curry paste, 2 tbsp brown sugar & simmer for 5 min. Then add 2 tbsp fish sauce.
-Add meatballs to the sauce and simmer (covered) until cooked through.
-Throw in a handful of peas (optional)
-Serve over sticky rice or jasmine rice (and maybe a squeeze of lime over top and a cucumber garnish)
