paella is an easy weeknight one-pot dinner that can be cooked on the grill or stovetop. Cook whatever protein you have in a pan/on the grill. Set it aside and clean the pan. For four people cook 1 large tomato, 2 bell peppers, 1 medium onion, some garlic, parsley, and paprika over medium heat. Add rice to the pan with the veggies, then add chicken stock per the rice's instructions. Add olives, bay leaves, and saffron to the pan and cover for 15 minutes until the liquid is absorbed. Add protein and enjoy.
