Cook approx. 1 cup quinoa

Mix lime olive oil, white wine vinegar, Dijon mustard, cumin, salt, pepper, minced garlic and onion together.

Pour vinaigrette over quinoa while still warm.

Add veggies (I used green pepper and mushroom) roughly chopped.

Add feta cheese and Marconi almonds.

Top with chopped basil.
