Inspired by An Ottolenghi recipe in Jerusalem, only his called for clams, shrimp and mussels, and all we had were shrimp. Saute some sliced garlic in olive oil, add whatever herbs you like and a few strips of lemon peel. Add a can of diced tomatoes and cook until bubbling. Add in the shrimp and sink some feta in there, letting it stick out of the sauce. Top with some sliced scallions and put into a 475 oven. We later switched to broil to brown the cheese, etc. despite the weirdness of cheese and seafood, this was a winner! Eat with good bread. #healthyanddelicious #dinner
