Salad for salad haters: sweet pickled beets (roasted first, quick pickle with loads of sugar, rice wine vinegar, chili, cinnamon and peppercorns), fennel, oranges, raspberries, radishes and greens. Dressing consists of lemon, mint, olive oil, salt and pepper. Trick: to keep fennel crisp and white, soak in ice cold water with lemon juice and salt.
