My new favorite thing is mixing sautéed greens with mashed potatoes - inspired by Heidi Swanson. Here's a version with collards (cut into confetti and cooked down with garlic and olive oil) with mashed new potatoes and turnips from my CSA. Add butter and warm milk for good measure, of course. Simple pan-seared salmon makes it a meal.
