Fry 3 a couple of large spring onions and about 3 cloves of garlic in some olive oil . Once softened add about a teaspoon of cumin .
Cut the top of 2 large tomatoes , scoop out the insides. I throw the insides in with the onions and spices. Rinse a tin of black beans and throw in with onions and season. Cook gently for a minute or 2 , scoop back into tomato she'll, leaning enough room to crack in an egg. Cook at 180 for 12-15 mins. Sprinkle over some feta for last 2-3 mins of cooking. Serve any extra beans on the side
