Make a luscious salad dressing using the yolk of a hard cooked egg that you press through a fine mesh sieve; whisk in a great-tasting olive oil, lemon juice, a good dab of Dijon mustard, salt and a splash of water. If you have a couple tablespoons of buttermilk or half-and-half, whisk that in, too Finely chop a small handful of tarragon leaves and whisk that in, along with freshly ground pepper. Cut the egg white into small dice and sprinkle over blanched string beans. Drizzle the dressing over the beans and sliced roast chicken breast for a lovely late spring lunch. ;o)
