Shakshuka for one!
I make a typical amount of the sauce and then portion it out individually- Perfect for giving each guest their own little dish or (like today) making a quick but special breakfast for one.
For the sauce: Sauté thinly sliced onion and bell pepper until tender. Add minced garlic, sauté until fragrant. Add cumin, smoked paprika, ancho chili powder, tumeric, coriander, oregano, salt and black pepper. Pour in 28oz of crushed tomatoes and let simmer together.
Crack an egg directly into the sauce and simmer on low until the whites are set.
I often top with feta, parsley and sometime truffle oil if I'm feeling extra special! Perfect for scooping up with toast (which apparently I'm incapable of making well).
