Caramelize some onion in a small saucepan. Find an old jar of unfinished fruit jam (I had blueberry) and empty it out into the saucepan, stirring, with some water, ketchup, vinegar, Dijon mustard, garlic powder and some smoked paprika. Make it pretty loose so that the sauce can cook down a little. After cooking out the sharpness of the vinegar, taste and adjust sweetness with brown sugar. This will depend on how much jam you used, so just keep tasting and adjusting to how you like it. If you like your BBQ sauce to be a little thicker, add some cornstarch slurry. Finally, blend it up smooth and serve however you want! I used my blueberry BBQ sauce to glaze some delicious beet-mushroom burgers.
