Vegetarian tacos: sauté chopped eggplant, zucchini, mushrooms, and onions in a hot skillet with olive oil. Add some cumin, smoked paprika, salt, and pepper. Char up some corn tortillas and add that filling, top with thinly sliced fresh bell pepper, jalapeños, crumbled cheese. I like mine with some hot sauce too. Happy Taco Tuesday! ??
