Shaved beet and avocado salad with harissa salsa verde // just what I needed when craving something bold and loud in flavor but not wanting to cook.
Make harissa-salsa verde by roughly chopping greens and herbs of choice (I did arugula, oregano, and mint), capers, anchovy if desired (I omitted for ease) -- then add big dollop of harissa, lemon juice, and olive oil. Season to taste. Combine with canned chickpeas and let marinate. Meanwhile, shave beets, slice avocado, cube feta, tear basil. Combine and serve.
