Fish Salpicon! So easy and fresh!

Roughly chip cilantro, a serrano chili, and two scallions. Drizzle with lime juice. Dredge tilapia in wondra flour and season with salt and pepper. Pan fry tilapia until golden and crispy. Transfer to plate let cool and flake into pieces. . Add to bowl with cilantro by gently folding it in to combine. Serve with rice and lime wedge and a scoop of gently mashed avocado.
