Orange lentil soup, warm and comforting
You need: 2 cups orange lentils, washed / medium onion, diced / 5 cups chicken stock / cumin / salt & pepper
To make: in a pot, heat some olive oil, sauté onions until soft, add lentils, pour stock and bring to boil then reduce heat and cover. Once lentils are soft, purée until smooth and add cumin, s&p. Serve warm with lemon wedges, garnish with croutons & enjoy!
