I made shakshuka the other night and had some leftover sauce which I used today with a poached egg! Next time I'll make double the sauce and freeze...

Seems like everyone has their own spin on shakshuka and you can't really go wrong! Chop and sauté an onion until soft. Add 2-3 cloves minced garlic, teaspoon of paprika, teaspoon of cumin some salt and pepper to taste. I had a roasted red pepper so I chopped that and added it too. Pinch of red pepper flakes for a little heat. Add 28 ounce can of diced tomatoes and let it simmer and thicken. Add 1 cup of crumbled feta. Make wells in the sauce and gently crack an egg in each well. Let cook 10 minutes then cover and cook 5 minutes more.
