Nancy Jo says the star here, on top of this broiled zucchini, is the salsa verde. She hand chopped parsley, dill, chives, and mint, and added Dijon mustard, capers, a small clove of grated garlic, a squeeze or two of lemon, and finished with olive oil and salt and pepper to taste. (She adds that dried chili would be a nice addition as well!)
