Mediterranean Lamb: Sauté chopped onion in olive oil until soft, add Penzy's Turkish seasoning and some Aleppo pepper and bloom it before adding cubed eggplant and some chopped mushrooms; cook until eggplant is lightly browned and softened. Add ground lamb and cook until no longer pink. Then add some beef (or chicken) broth and simmer for about 15 min. Serve over rice and top with pita croutons (saluted in butter/olive oil) and a quick Taziki of yogurt, cucumber, parsley, and garlic. #notarecipe #dinner #dinnerathome #eggplant #lamb
