"New Mandoline" Salmon: thinly slice one blood orange, one lemon (Meyer if possible) and one large shallot. Cut 1 1/4 lbs salmon into three portions. Salt and pepper both sides of the salmon. Lightly coat a small sheet pan with olive oil. Scatter slices of lemon, orange and shallot on the pan and then top with fresh dill sprigs. Place salmon skin side down on the lemon/orange/shallot/dill and then top with more slices of fruit, and more dill sprigs. Pour white wine all around the salmon and cook in a 375 degree oven for 25 min (Check after 20). Serve with the cooked fruit, it's delicious. A great sauce can be made by cooking down the liquid remaining in the sheet pan after baking and then swirling in 3 Tbs butter off heat. Evil, but delicious.
